July 31st, Really?

This summer has just flown by.  I cannot believe today is July 31st and we move into August.  The weather here definitely feels more like September than July though.....I'm still really wishing it was about 95 degrees (hot and sunny).  Although, I will admit that it has been nice sleeping with the windows open overnight and having some fresh air in the house!

I have been a bit of a slacker the past week.....all around.  Since starting my slow-carb diet, I haven't had a ton of energy for getting up early or working out.  I was last at the gym on Monday 7/22....UM, almost 10 days ago.  Terrible.  I received an email reminder from friends about our upcoming race on Sept 19th - so it is definitely time to kick it into high gear.........I really don't want to walk that first 5k race!  7 weeks and counting - time to lace up the shoes and hit the road again!  I'm sure it will be a bit of a struggle at first since I don't even recall my last real run.  Since the weather isn't 95+ degrees least running outside should be nice.

The hubby and I had a nice weekend with the girls - and we spent Sunday evening on a dinner cruise on The Mississippi River and stayed overnight at Treasure Island casino in MN.  We won free tickets to the dinner cruise and a free hotel stay --- so at least that part of it was free!  Neither of us walked away big winners from the gambling.  Oh well, it was nice to have an evening away.

Slow Carb, Low Carb or No Carbs?

I'm going to jump back on the "low-carb" bandwagon.  In the past years, I've done both Atkins and South Beach diets in the past and I always been able to drop a significant number of pounds.  This time around, I'm going with something called the "slow-carb diet".  This is very similar to both Atkins & South Beach because you eliminate most "white" carbs.
Here are the 5 rules:
  1. Avoid "White" Carbohydrates
    • All breads, rice (both white & brown), cereal, potatoes, pasta, tortillas and all breaded fried foods
  2. Eat the same basic meals over and over again
    • I'm not 100% sure I can do this.....but with most diets, when I find something I like to eat, I generally keeping eating that until I'm sick of it
    • Lean Proteins, Beans and veggies should make up almost every meal
  3. Don't drink your calories
    • No Milk!  But coffee and red wine are both ok (whew!)
  4. Don't eat fruit (this will be tough!)
  5. Take 1 day off per week
    • This may be the best rule of all --- have a cheat day!
I'm on Day #2, and yesterday I did alright.  I went to the grocery store in the morning after the gym and I loaded up on fresh veggies, meat and beans.  When I got home I made mini-egg quiches (I slightly modified South Beach Recipe) for breakfast this week and chili with turkey & beans in the crockpot for dinner & lunches.  My husband and girls don't really like beans, so I'm guessing this chili will be all for me!!    

Veggie Quiche Cups
  • 3/4 Cup Egg Substitute
  • 1/4 Cup Green Pepper - Diced
  • 1/4 Cup Onion - Diced
  • 1 Pkg-10 oz Frozen Chopped Spinach
  • 3 Tbsp. Salsa
  • 1/4 Cup Reduced Fat Shredded Cheddar Cheese
  • Preheat oven to 350F degrees.  Line a muffin pan with 12 foil cupcake/muffin liners. 
  • Place frozen spinach in the microwave and thaw - drain all excess liquid.
  • Mix egg substitute, green pepper, onion, spinach and salsa together in a bowl.
  • Fill the foil cups evenly between the 12 liners and top each with a little cheese.
  • Bake at 350F degrees for 20 minutes or until a knife inserted in center of muffin comes out clean.
*Makes 6 servings (2 per serving).

Finish the Sentence

Hello --- I have never actually done one of these before....I've read lots and lots of them...but today, I finally took the plunge.  Here is to more link-ups.


If I had one extra hour in the day..........I would use it to work out, seriously.  Then I could still sleep as long as I wanted to without dreading getting up at 4:35 am!

I wish my name was.....I like my name now, but when I was growing up, I hated it.  People always called me Justin - instead of Justine (see the E).  Even when looking directly at me - and I don't think I ever looked like a boy?  WTH?!?  As a matter of fact, the Deacon who married me & my hubby called me Justin.  We had been meeting with a different Deacon at our church....but at the last minute, found out he wasn't going to be available to perform our we met Deacon #2 the day of the wedding.  And as we were starting he says:  "We are here to celebrate this wonderful day with Ryan & Justin".  I mean, really?!?!?  Did he think I was Ryan?  That is one of the many things I will never forget about our wedding day!  Oh, and I have a killer last name now.  Growing up, it was Smith, now it is Rockers.  I definitely upgraded.

I think anything chevron is....adorable.  I have 2 girls.  I love everything pink, purple and patterned. This is my awesome phone case!  Although, didn't it used to be called Zig-Zag?!?!

My last nightmare......someone was breaking into our house in the middle of the night, but my hubby (who wakes up to almost every noise) was sound asleep ---- so I had to get up and try to scare the person away. Um, right - that would never happen.  I sleep with a hall light on and the phone next to me whenever my hubby is gone.

Sometimes.....I would like to have another baby, but then I wake up and realize, I'm over 40 and my girls are no longer in diapers, sleeping through the night and able to keep themselves occupied now.

My last meal on earth would be.....A ribeye steak and ahi tuna or sea bass from Manny's....with a few extra dirty martini's and the giant brownie (scroll until you see this amazing photo) for dessert.

I would much rather......bake something delicious and bad for me to eat - than workout or go running.  I hate running.....although, I'm trying to hate it less. the best condiment ever.  It goes with everything......sandwiches, burgers and french fries! Oh, and it should be Mayo - not Miracle Whip.  Mayo is the real deal!

10 years ago.......I didn't think I would be married to the love of my life with 2 amazing little girls or living in the suburbs, my how quickly time flies!

Selfishly.....My hubby & I go to Vegas every single year (at least once).  We also go on a vacation without our girls every other year (now that they are old enough to understand what vacation is).  I wouldn't change anything about it.  We are fortunate enough to have awesome family who stay with our girls when we are gone....and I think it makes them both more well rounded.

My favorite show on TV right now is......So You Think You Can Dance.  My husband hates it.  It is set on my DVR to record so that I never have to miss it.  He retreats to the basement to watch baseball or sports center whenever I turn it on!

And, George Zimmerman.....will spend the rest of his life living with what happened.

The Weekend's Over

Our fun-filled weekend is over.............and the constant eating and drinking caught up with me on the scale this morning.  Boo to that!!!  It was a great weekend - we had such a fun time with our friends.  The girls loved every minute of the water park and all of the great activities they had for the kiddos.  

The girls had their faces painted, got balloon animals, went to the kiddie dance party, stayed up and played with their friends until 11pm.  On Friday night, they made a super cute movie trailer together.  So fun!  I have to figure out what APP they used for it.  The girls had a blast making that.  But, I think one of their favorite parts (and mine) of the weekend was that they ended it at Scooops - Kids Spa.  It was so cute - they loved every minute of it, and I had such a great time watching them!  Here is to the first of many girls-day spa trips!  

But, alas, the weekend is over - and it is time to get back on track.  That means back to my 90-Day Challenge and tracking my food on Myfitnesspal!  I'm extra motivated to get back on track after I saw the number on the scale this morning.  PUKE!  I worked out this morning, completing Day 15 of my fitness challenge and I've had 1 hard boiled egg, 2 cups of coffee with sugar free vanilla and low fat natural bliss coffee mate and a protein shake.  I need to drink about a gallon of water the rest of the day now to help cleanse all of the junk from my body.  Then, my plan for the rest of the day is to have another protein shake for lunch, a small vanilla yogurt & strawberry parfait for my snack and grilled pork chops for dinner.  I'll probably pair the pork chops with some steamed broccoli.  I'm hoping to have some time later today to pull together a meal-plan for the rest of this week, to help me stay accountable.

Day 12 - Fitness Challenge

I mentioned before that I'm doing a 90-day fitness challenge.....find it here:  Bikini Body Mommy 90-Day Challenge.  Today is Day 12 and you re-take a Fit Test that you take on Day 1.  I just completed my re-take, and here are the results:


*Note that my pushups are modified, I still can only do 1 "real" pushup.

That is also my official workout for the day ---- now I'm off to finish packing, we are headed to Wisconsin Dells for the weekend with the girls and 2 other families.  More fun in the sun & water.

Where has the time gone?

Oh my goodness, I woke up this morning and realized it is July 10th.  Where has the time gone?  Wasn't it just spring last week?  Now we are half way through the summer.  Tears.

The last 2 weeks have been a giant blur.  I was out of town for 3 days on a work trip and then came home to soccer games, swimming lessons and graduation parties.  Last week was the 4th of July, so I took Friday off to enjoy the sun, warmth and water with my family.  We stayed in town and spent the 4th at my sister's house - in her pool.  We took the girls to see fireworks, I could not believe they stayed up that late.  They loved the fireworks and we had a great time!!

We had great weather the rest of the weekend as well and we were able to spend both Friday and Saturday at the water park by our house with friends.  Saturday we ended up at the water park early and then we all went home for awhile before we met up again at our house for a BBQ.  It was a really fun holiday weekend with lots of time in the sun and the water!  I was very tired by Sunday though!!

Bunker Beach - Ice Cream Time! 

This week, I'm trying to get back on track.  I was out reading a ton of blogs and I stumbled upon a facebook group called Bikini Body Mommy.  I've started a 90-day Challenge as part of that group - I started on July 1st - since I was close to that day, I figured it was a great time to start!!!  I'm really excited to try this program because it mixes up 3 days of cardio with 3 days of strength training and 1 day of rest - and it seems very manageable to complete.  So far most of the strength training days are setup to take less than 30 minutes and only require a hand weight - which allows me to easily do them either at home or at the gym.  The cardio days are only 45-minutes of cardio, again really easy to do either at home or the gym.  I'll be sharing my results after 30, 60 and 90 days.  I'm in the middle of week 2 and so far, I love it!!
