Weigh In Wednesday

I haven't posted a weigh-in for awhile here.  So, I guess now is as good a time as any.  I was just recently in my very first Diet Bet challenge (with Wendy and Kristin).  It was a great way to stay accountable as I'm trying to drop a few more pounds before summer.  I've also just finished my 5th week of the Fast Metabolism Diet.  That has definitely had a huge impact on my weight loss.

I ended up missing my goal weight for the Diet Bet by less than 1 pound; which really sucked!  I was pretty bummed and I think I stepped on my scale at least 20 times yesterday morning while I was getting ready for work.  Oh well, I'm still in one more Diet Bet that ends in 2 weeks; maybe I'll win in that one!!!

I decided to take pictures before I started the Fast Metabolism Diet and of course I had to take pictures for the Diet Bet challenge.  I decided to take one yesterday (in case I got the scale to move down a bit).   I'm down 12 pounds since starting the FMD and quite a few inches (I forgot to measure yesterday ---- I'll get those added next week).

And, I can't believe I'm sharing these ---- but here goes - Before (Pink) and After (Blue) --- seems backwards, but it ended up being the direction I was facing.  I'll work on that!

Five on Friday - Randomness

Happy Friday.  And, Happy Spring.  As I live in Minnesota, it doesn't really feel like spring yet.  There is still A TON of snow on the ground, but yesterday it was over 40 degrees - and with very little wind, it actually felt pretty good!  It snowed for about 10 minutes this morning, but luckily that didn't end up sticking to the ground.  March in Minnesota tends to be our snowiest month.  But, we've had MORE than enough snow this winter; bring on warm weather, sun and spring!!!!

Five on Friday - Randomness in my brain.

{One} 
Starbucks Venti Vanilla Latte, oh how I miss you.  I'm currently on week 5 of the Fast Metabolism Diet and there is NO dairy in that program.  Technically NO Caffeine either, but that is much too difficult - I have given up enough, so I still have 1 cup of coffee per day.  The FMD is a 28-day or 4 week program; but I haven't quite made it to my goal weight, so I decided to keep going.  Once I hit my goal weight, I'll be celebrating with You Vanilla Latte!!  (Oh, and no liquor either, but I may have had 1 glass of wine last week on date night with the hubby).


{Two} 
Girls = Drama.  I love my girls more than anything in the world.  But, I cannot take getting them ready for school!  Typically my hubby does that in the mornings but he is in Vegas for March Madness - so I'm on single parent duty this week.  My oldest informed me yesterday that it was the "worst day of her whole life" because I wouldn't let her new flip-flops to school (did I mention there is still a TON of snow here?)  Oh boy - tears on the way to the bus.  Yikes!  Today, my youngest couldn't find a shirt that "matched" with her black jeans.  First, they are jeans and second, they are black.  Um, anything matches!!!!!!  Try reasoning with a 6 year old though.  Hysterical tears when I told her she had exactly 1 minute to find a shirt and get her coat on or she would miss the bus.  I'm so happy my hubby is back on morning duty next week!


{Three} 
Spring.  I'm so happy you are here - now if the temperature could just stay above 40 for a week - I think all of the gross dirty snow would be gone.  I have noticed grass in my yard though; and at work they are starting to get the grounds ready for spring plants!!!!  This was our winter - so to say I'm excited for spring is an Understatement!!!!  Bring it!  



{Four}
Clothes.  We recently moved to a "Dress For Your Day" dress code at work - which means no more suits (on most days) - YAY!  I don't have many important meetings in my job, so our new dress code means I can wear jeans to work almost every day!  That is GREAT, but I only have 3 pair of jeans right now.  I'm in a bit of a struggle with myself about new clothes too (because I've lost 12 pounds on FMD, but I still have a few more to go)/  I don't want to spend a ton of money on new clothes if in another month I may be down 1 size.  What to do?!  Maybe I can hold out until its warmer and I can start adding my capri pants in the rotation.  


{Five}
March Madness.  Pretty sure my bracket(s) can all be ripped up!  Dang you Harvard, North Dakota State and Dayton!   I'm not in last place, but I'm petty close to the bottom.  One person in our pool has all of them right going into the games today.

Chicken & Veggie Soup

I've talked about the fact that I'm following the Fast Metabolism Diet before, and as part of that plan you switch up your foods every few days.  The first 2 days are carb-heavy days.......NOT white carbs, but fruits and whole grains.  As someone who spent a bit of her life NOT eating many carbs - and not much fruit because of my low-carb phase - I love these days.  You get to have fruit with breakfast, 2 snacks and lunch and it is sweet, yummy and delicious!

The next 2 days (Phase 2) are the LOW-CARB/HI PROTEIN days.  I've done both Atkins and South Beach before, so I don't really have a huge issue with these days.  One thing I do miss from those other programs is having cheese (no dairy in this plan) but, I also know that it can get a little boring just eating chicken and broccoli for every meal.  I decided to switch things up a bit and I threw a bunch of green veggies and chicken together in the crockpot for a delicious Phase 2 soup.


Crock Pot Chicken & Veggie Soup

Ingredients

  • 3 Chicken Breasts
  • 1/2 Medium Onion, diced
  • 1 Red Pepper, diced
  • 1 package of baby spinach
  • 1 head of broccoli
  • 4-6 Cups Chicken Broth
  • 1 tsp Mrs. Dash Garlic & Herb seasoning
  • Salt & pepper to taste


Directions:
  • Place the onions, pepper, spinach, broccoli and chicken in a crockpot.
  • Add chicken broth to fully cover all of the ingredients
  • Cook in the crockpot on low for 6-8 hours
  • Take the chicken out of the crockpot and shred, return to the soup.
Enjoy!!

There could be any variation of Phase-2 green veggies added to this soup.  If you like your soup a little spicier you could add additional seasonings as well.  This soup makes approximately 4 servings (about 1 1/2 cups each) and it freezes really well.

Friday Five - Birthday Girl Edition

Happy Friday --- my favorite day of the week!!!!  And of course, the Five on Friday linkup!  Today's edition is dedicated to my daughter; her birthday is this weekend so i thought it would make a great Friday post!



One:
Isabelle was born at 37 weeks --- and after a crazy long labor; I ended up delivering her via c-section.
She was perfect in every way.  We didn't know if we were having a boy or a girl - so we didn't have her name completely picked out when she arrived ---- but we took one look at her and knew that her name would be Isabelle.  She weighed 6 lbs 2 oz and was 19 inches long.  A little peanut with a ton of black hair like her daddy.




Two:
Isabelle changed so much over the next year growing from a tiny little newborn into a little toddler.....she started walking and going everywhere.  She loved starting to eat real food --- and her favorite things to do were to eat pizza and watch Mickey Mouse with daddy!!!  We sold our townhouse and found our new house.....the day we got the offer, I found out I was pregnant with baby #2, her little sister.


Three:
She loves being a big sister!!!!!  She was 20 months old when her little sister was born....I think that was a great age for her to be when her sister arrived, she was so excited about her sister that she didn't really have any times where she was jealous or angry about time being split between her and the new baby.


Four:
She was growing into such a little girly girl.  She still loves all things pink and dressy!!!!  She started to really get into princesses and dressing up!  She still loves princesses (especially FROZEN!) and she loves to wear dresses and skirts.




Five:
She is turning 8 this weekend....I honestly cannot believe how quickly the time flies.  It really does seem like just yesterday I was holding her in my arms and rocking her to sleep in the chair in her room.  She is so kind and loving.  She tries so hard to be good most of the time, but she is very stubborn!  She is also very competitive - and those two traits together can sometimes push all of my buttons!  She is still very much a little girl though - and just recently at a school outing she was bowling with some other kids.....she was very mad at herself for not having the highest score and she got both mad and upset at the same time.  My husband was volunteering at the event with her and he said:  It's tough, she has my competitive nature but she is still such a little girl to get so mad that she started to cry at the bowling alley.


I'm sure the next few years will have their moments of me wanting to rip out all of my hair with her stubbornness; but I am also pretty confident that this trait in her will keep her out of trouble - because if she doesn't think something is right she won't do it - and she doesn't care what anyone else thinks of it!

My Brother's Wedding Recap

This post is a bit overdue, but I started writing it after the wedding, but never ended up publishing it for some reason.  So, here it is today.  For my brother's wedding, he and his lovely wife decided to have a small family only wedding and a big party-reception.  They rented out a cute little restaurant near us to host the reception (aka. big party).  Since they were having only the reception, they decided not to have a traditional wedding cake but instead had a candy "bar" and cake pops.  Here was a sneak peak of the cakepops and the display prior to the reception:



They also decided to save on some additional costs by making their own floral arrangements (read:  made by my sister and me).  We got up early on Friday morning, went to the restaurant as soon as we could get into the place and starting creating the master piece floral arrangements.  I forgot to take a picture of the final project (oops).  They were so pretty and they turned out awesome (in our opinion, and the bride's - which was all that mattered).  The final version has white epsom salts in the bottom of each vase with a battery operated tea-light candle sitting down in the salt crystals which made the bottom of the clear vase glow below the flowers.  We got a TON of compliments on them!  And, my aunt and cousin each stole took one home with them after the party.



The wedding ceremony was so nice.  Since they were having such a small ceremony, my sister and I were also the photographers for the day.  We worked hard that day!  My brother and his wife decided that they didn't really care about having professional pictures taken - they just wanted some fun pictures to remember the day.  Neither my sister nor myself are anything close to professional photographers - we were just both taking as many shots as possible with the hopes that some of them would turn out.

My girls were the only other people that stood up with my brother and his wife.  They were beyond excited to be part of the big day.  We all had the best time!

Thankful

I am so linking up with Jen at Morning Coffee Confessions for Today I'm Thankful.

I'm so thankful for my husband!  He has been traveling quite a bit for work the past few weeks; and I have had to take over both mom & dad duties.  We are fortunate because his job is flexible enough that he can get my girls on the school bus each morning and be back home when they get off the school bus each day.  He deals with all of the morning drama of two girls.  Getting them up, getting them breakfast, helping them figure out what to wear and often making lunches.  It is A LOT of work.  And, today I'm so thankful that he deals with that every week day.  It is usually so stressful for me - and I'm usually pretty happy to get to work where it is peaceful and quiet.

To all of those single parents out there; I applaud you!  I couldn't do it!!!!

Happy Thursday and I'm thankful that my hubby gets back home tomorrow afternoon!!!!!!!!!!!!!

So What Wednesday

Happy Wednesday.  I was all set to write a post on Monday for one of my favorite link-ups "Motivation Monday" with Wendy and her gang, but honestly - I had nothing to add.  I have NOT had a lot of success losing weight ---- I have pretty much gained and lost the same exact 10 pounds forever.  So, I didn't really feel like I could honestly give anyone advice on The Top 10 Weight Loss Tips.  I LOVED reading all of the posts, but I have no tips.  I am trying REALLY hard with my new challenge to kickstart a healthy way of life, not a diet necessarily.  You can read about that here.

So, on to today's post, and it is time for another linkup that I haven't participate in for awhile, but it is always a fun one with Shannon Life After I Dew and "So What Wednesday"

Today I'm saying So What to:


  • The fact that I have to sleep with my phone next to me in bed when my hubby is gone.....which he is this week, was last week and will do again in 2 weeks.....it just makes me feel better.
  • I let my little one sleep with me when he is gone too, again see above - he never lets our girls sleep in our bed, but for me it is nice when my "baby" wants to do it. 
  • I have no idea what to give up for Lent, considering it starts today.  With my FMD, I have already given up white flour, white sugar, white rice, cheese and all things dairy..........I'm honestly not sure what else I can possibly give up.  I did consider Facebook - but then I was already on that today.  It may end up being staying off ALL social media and email between dinner and bedtime; to spend more quality TIME with my girls.
  • I haven't worked out at my gym in almost 2 months.........I'm GOING to get back into it next week when my hubby is back in town and we can get back to our normal routines......As a side note, this winter has been BRUTAL and the very last thing I wanted to ever do at 4:30am when it was 25 below zero outside was go to the gym!
